The selected vendor will be responsible for providing comprehensive inmate food services and officer dining room services for a government authority located in Woodstock, Illinois. Contractors are required to submit detailed menus with clearly defined descriptions and specifications for each food item. Each item on the menu must include precise weight or volume measurements (e.g., 1/2 cup, 3 oz.), and portion-controlled items such as cakes, muffins, and cornbread must indicate the exact size of the cut (e.g., 1/60 cut).
Casserole portions are to be a minimum of 10 oz. in weight, and for pre-purchased, fully cooked items like breaded chicken patties, the menu must specify their weight, either before or after reheating. Menus should offer a diverse selection of flavors, textures, temperatures, and visual appeal. Additionally, the weekly menu must provide an average of 2,900 calories per day while meeting all required nutrient standards and avoiding excessive fat calories. To support these guidelines, portions for margarine, butter, salad dressing, and mayonnaise should be restricted to maintain balanced and filling meal options. Interested vendors must submit all questions before June 29, 2026.
